چکیده

The observation of the fate of free radicals coming from food after oral administration could be important in evaluating their reactivity in vivo. The aim of this study was to demonstrate that it is feasible to detect directly in vivo free radicals coming from food with the use of low frequency electron paramagnetic resonance (EPR) spectroscopy. Because polyphenols are easily oxidized into stable radicals, we assumed that these radicals could be detected in food. We chose licorice, which contains several types of polyphenols. The presence of free radicals was demonstrated in licorice-flavored sweets. Using low frequency EPR spectroscopy, we detected these free radicals directly and noninvasively after oral administration to mice. These radicals were rather stable in the guts of the mice. This study is the first report demonstrating noninvasively the presence of free radicals in vivo coming from food. J. Nutr. 130: 1831–1833, 2000.

Demystifying EPR: A Rookie Guide to the Application of Electron Paramagnetic Resonance Spectroscopy on Biomolecules

Electron Paramagnetic Resonance (EPR) spectroscopy, also known as Electron Spin Resonance(ESR) especially among physicists, is a strong and versatile spectroscopic method forinvestigation of paramagnetic systems, i.e. systems like free radicals and most transition metalions, which have unpaired electrons. The sensitivity and selectivity of EPR are notable andintriguing as compared to other spec...

In vivo EPR spectroscopy of free radicals in the heart.

Electron paramagnetic resonance (EPR) spectroscopy can be applied to directly measure free radicals; however, it has not been possible to measure important biologic radicals in situ because conventional spectrometer designs are not suitable for the performance of measurements on large aqueous structures such as whole organs or tissues. We describe the design, construction, and application of in...

Effects of water on fingernail electron paramagnetic resonance dosimetry

Electron paramagnetic resonance (EPR) is a promising biodosimetric method, and fingernails are sensitive biomaterials to ionizing radiation. Therefore, kinetic energy released per unit mass (kerma) can be estimated by measuring the level of free radicals within fingernails, using EPR. However, to date this dosimetry has been deficient and insufficiently accurate. In the sampling processes and m...

Paramagnetic changes during development of a transplanted AKR-J leukemia in mice as measured by electron spin resonance.

Paramagnetic changes occurring during tumor develop ment were studied in the mouse AKR leukemia (trans planted) model system using electron spin resonance. Para magnetic changes were found only in blood and in organs directly involved by the leukemic cells. The change in blood consisted of an increase in a paramagnetic transition element complex, and occurred prior to the tissue changes. In the...

Determination of the Antioxidant Status of the Skin by In Vivo-Electron Paramagnetic Resonance (EPR) Spectroscopy

Organisms produce free radicals which are essential for various metabolic processes (enzymatic oxidation, cellular respiration, signaling). Antioxidants are important chemical compounds that specifically prevent the oxidation of substances by scavenging radicals, especially reactive oxygen species (ROS). Made up of one or two unpaired electrons, ROS are free radicals that are highly reactive an...
